The atmosphere is relaxed and casual, engaging in that inclusive southern hospitality. On any given day you might hear music in the background, people playing pool or drinking (getting progressively drunk) at the bar.
The bar was previously owned by a New Orleans cook named Francis Martin. He started the business on his own and kept it going for over 40 years. He found himself understaffed so he sent an ad out for a co-manager, and that co-manager ended up being Sam Merlotte - who had more than enough experience running a restaurant.
Suddenly, Francis Martin died in his home. He had no one in NYC to give his restaurant to, so he left it to whatever management it was under. That happened to be Sam.
